A few people were very keen to know how to make the lemon and lime syrup I mentioned in my last post. Here is how to do that!
Lemon & Lime Syrup
3 limes, sliced roughly
4 lemons, sliced roughly
500g caster sugar
700ml water
Pop everything into a saucepan. Bring to boil. Boil for 5 minutes.
Strain the fruit out and then decant the liquid into bottles using a funnel.
Makes … a bit over a litre? I actually can’t remember. Someone make it and tell me!
You can use this a cocktail base or just have it with soda water or regular water as cordial. Best with lots of ice!

You can also do this with mango skins and seeds and pineapple skins and cores too! Great way to use up fruit bits that would otherwise be thrown away. I love it with soda water as a more interesting non-alcoholic drink :)
